A full French course dinner in your room by visiting chef Atsushi Mitsuishi, based in Karuizawa
Chef Mitsuishi worked at French restaurants in Tokyo before moving to France on his own. He honed his skills at a number of renowned establishments, including the Paris bistros L’Ami Jean and Jadis. At Passage 53, the first Japanese-run restaurant in France to earn two Michelin stars, he made a major contribution to winning and maintaining those two stars. After returning to Japan, he began cultivating fields in his hometown of Saku, growing his own herbs and edible flowers. As a chef without a fixed restaurant, he now offers light French cuisine to gourmets gathering at villas in Karuizawa, using the excellent ingredients of Shinshu and treating them with a restrained hand. Drawing on his experience as a sommelier and his time working in Burgundy, France, he is also highly regarded for pairing dishes with wines selected from his own wine cellar.
